These Vegan Peppermint Chocolate Bars will be a hit at your next party! They are gluten free, paleo, and have no added sugar!! These are a healthy holiday treat that will have your guests running back for seconds. Ingredients •3 cups shredded coconut unsweetened •2 tsp peppermint extract •1/2 cup coconut oil melted •4 tbsp cacao powder •5 dates pitted •goji berries (for topping) Instructions Line an 8×8-inch baking pan with parchment paper, set aside. Soak dates in a bowl of water for 5 minutes to soften. After these 5 minutes, create the chocolate layer. Chocolate Layer In a blender, combine melted coconut oil, cacao powder, and dates until smooth. Pour into the prepared baking pan and freeze for 20 minutes, or until the chocolate has hardened completely. White Peppermint Layer In a high-speed blender, blend coconut flakes until a buttery consistency is reached. It will first turn into a powder, but scrape down sides occasionally and continue blending. It will quickly turn to a buttery consistency. Stir in peppermint extract. Once the chocolate layer has frozen, pour the white peppermint mixture over it, and place back in the freezer for one hour, or until frozen. After all the bark is frozen, cut into squares, and enjoy! Was du dazu brauchst: (Kuchenform von ~30cm Durchmesser): ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 300g Pizzateig (selbst gemacht geht natürlich auch) - 150 ml Pizzasauce - 1 Packung Veganes Hack (Shop) - 1 Packung No-Muh, RAC (Shop) - 2 Peperoni - 2/3 Tassen Mais - 1 Tasse Spinat - Frischer Basilikum ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Natürlich wird der Cake noch besser, wenn man den Teig selbst macht, aber manchmal soll es einfach schnell gehen und dann kannst du ruhig zu Fertigteig und Sauce aus dem Glas greifen. Beim Topping empfehle wir dir 2 bis 3 Zutaten mit geringem Wassergehalt. Tomatenscheiben zum Beispiel weichen die Teigschichten beim Backen zu sehr auf und lassen den Pizza Cake matschig werden. Ofen bei 200 Grad vorgeizt? Teig ausgerollt? Topping vorbereitet? Dann kann’s losgehen: Als Erstes kümmerst du dich um das „Gerüst“ deines Pizzakunstwerks. Dafür nimmst du zunächst den Ring der Springform zuhilfe, um ca. 3 bis 4 runde Pizzaböden aus dem Pizzateig auszustechen. Damit die Böden in deinem Pizzakuchen nicht matschig werden, backst du sie im Backofen ca. 5-8 Minuten vor. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Lege anschliessend eine 20 cm Springform mit Backpapier aus oder fette sie mit etwas Öl ein. FRY-DAY but make it wontons! 🥟 . Fried chicken wontons with spicy apricot teriyaki dipping sauce is definitely what you need to make for your next gathering! This recipe is a crowd pleaser for sure! 🥟 Get my recipe below (inspired by @susiefishbein)! 🥟 - 🥟 Fried Chicken Wontons 🥟 • 1 pound ground chicken • 2 tsps minced ginger • 2 tsps minced garlic • 2 Tbsps coconut aminos/tamari/soy sauce • 1 Tbsps arrowroot or corn starch • 2 scallions, chopped • 1 package of @nasoya wonton wrappers . 👉🏻 Place the above ingredients (minus the wontons) in a bowl and mix with hands to combine. Let sit covered overnight in the fridge or at a minimum two hours. . FOR THE SPICY APRICOT TERIYAKI SAUCE: (can be made the day before) • 1 jar apricot @bonnemaman_us jam • 2-3 Tbsps dijon mustard, to taste • 2 Tbsps @kikkomanusa teriyaki sauce (could sub coconut aminos here too) • red pepper flakes, to taste . 👉🏻 place ingredients in a jar and use an immersion blender to combine until smooth. Pour sauce in a glass bowl and cover & place in fridge until serving. . The next day or hours later, it’s time to make the wontons! . 👉🏻 Place about a 1/2 Tbsp of chicken into the center of each wonton. Pinch together in any shape you like (I did triangles) and seal wonton with water using your fingertips. Place aside. 👉🏻 Fill a large deep pan or pot with vegetable or peanut oil about 3-4 inches up. Let oil warm up. Begin frying wontons in batches, flipping to cook both sides until golden brown, about 5-7 minutes for each batch. Place on paper towels to sock up excess oil. You could probably also bake the wontons in the oven until golden brown as well! . Fresh Rose Petal Jam ❤️ Hubby had just finished his evening pooja when I spotted the fragrant pink roses used for the deity. I have always wanted to go buy them to try a few recipes but I hardly ever go flower shopping. This time I saved these gorgeous beauties and look what I turned them into 😍 Homemade Rose Petal Jam #noaddedcolour #nopectin Recipe:: Ingredients Rose petals : 3 cups (use the light pink fragrant edible ones used to make gulkand) Raw unrefined sugar : 1 cup Water : 1 cup Juice of 1/2 a lime Note: Please check the rose petals for pests and rinse thoroughly. Fresh flowers would give the best results. Steps: Take water in a deep thick bottom pan and place over low to medium heat. Add the rose petals and the lime juice. Cover and allow the water to come to a boil and the petals to reduce in volume. Remove the cover (you might find that the petals look pale / have lost colour but no worries) Add the sugar and mix. Allow to simmer until the liquid turns syrup like and has reduced to half. Drip a couple of drops of the rose syrup on a plate. Check if the consistency is sticky once it cools. If yes. Turn off heat and allow the mixture to cool. (The hot syrup may look watery but it thickens as it cools) Once cool you can store it in a glass jar and refrigerate. **I decided to give it a churn in the mixer for a more uniform jammy texture (just pulse once or twice) . Vegan Butternut Squash Tacos with BBQ Guacamole and Strawberry and Basil Salsa 🌮 • • Let’s get messy! 🤤. I make butternut squash tacos every year, always in a different way. This is by far my favorite way to make them! These tacos are spicy, sweet, savory, a little smoky-ish, and most of all, delish! • • • Ingredients - Characters 6 tortillas, I made whole wheat tortillas 1 Butternut squash, halved, seasoned with sea salt, pepper, oregano and garlic powder, and roasted for about an hour on 375°F (190°C), or until tender, and then chopped 1/4 cup vegan cheese, + more to taste For Rice 1/2 cup raw brown rice, cooked 1/2 cup cooked black beans 1/4 cup tomato purée 6 stuffed Spanish olives, finely chopped Salt to taste For Strawberry and Basil Salsa 5 large strawberries, finely chopped 1/2 cup small onion, finely chopped 1/4 cup basil, chopped For BBQ Guacamole 1/4 cup homemade/ store bought guacamole 2 tbsp BBQ sauce of choice 2 tbsp hot sauce of choice Method - Tale 1. In the small pot you cooked your rice in, add tomato purée, stuffed Spanish olives, black beans and salt. Cook for about 10 mins on low heat 2. Combine strawberries, onions, and basil in a small bowl, and set aside 3. Combine guacamole, bbq sauce, and hot sauce in another small bowl. Mix well and set aside 4. To assemble the taco, warm up your tortilla, add the rice, then add the warm roasted butternut squash. Next, pour a little bbq guacamole and add a spoonful of strawberry and basil salsa 5. Nutrition has always been the hardest part of my fat loss journey! It has taken me years to figure out what works the best for my body AND what I enjoy enough to be able follow through with long term! Track your food. You need to know what you’re eating to be able to make adjustments. 2. Focus on protein and total calories. Once you’re more skilled at it you can fine tune carbs and fats. 3. Plan and prep your food ahead of time! Winging it leads to temptations and bad choices. 4. Actively search for new recipes. The more variety you give yourself, the more successful you’ll be at staying on track. 5. If you do make a bad choice or get off track, don’t let it be an excuse to go back to bad choices. Get right back on track and keep moving forward! These are the things that have really helped me with my nutrition. I think this is what heaven smells like: Tomatoes and garlic. Onion and herbs. Red wine simmering away for hours. Not in the quick weeknight dinner category. But maybe in the Ionlyneed5minutestoprepthisfordinneronSunday category. Give it a try. You will not be disappointed! You can do this! : Adapted from Oven-Braised Beef with tomatoes and garlic on @smittenkitchen. Check out my stories/highlights for instructions. : -Preheat oven to 300°. -Place a boneless chuck roast in a large dutch oven. I would recommend minimum 3 lbs. -Season generously with lots of fresh cracked pepper and about 2 t. salt. -Add to pot around the beef: 1 28oz can crushed tomatoes 1 large onion, quartered 1 head garlic, cloves peeled and removed 1/4 c. red wine 2 T. balsamic vinegar 2 bay leaves 2 sprigs fresh thyme -Sprinkle everything with more S&P. -Braise at 300° for 3-4 hrs. -When fork tender, remove meat from pot, shredding with 2 forks and discarding any larger pieces of fat -Taste sauce for seasoning and if needed, simmer on low to reduce and thicken slightly. -Add shredded meat back to sauce. -Serve over your favorite!
