Seafood Sunday meets Pasta Sunday with these LEMON PAPRIKA GARLIC SHRIMP and DAIRY FREE SPINACH AND RICOTTA LASAGNA ROLL UPS with SPINACH WALNUT PESTO. These roll ups were SO EASY and SO DELICIOUS! I used @eatbanza new chickpea lasagna sheets to make these. Happy Sunday loves! Hope everyone is having a wonderful weekend. Been a busy and productive one over here. Getting some work done today before the football game is one! What did you do this weekend? • • • Deets: @traderjoes wild shrimp seasoned with paprika, salt and garlic powder then sautéed in coconut oil and coconut aminos. After I cooked the shrimp I tossed them in a little lemon juice and olive oil. ROLL UPS: boil 4 @eatbanza lasagna noodles for about 6 minutes. Then spread a mixture of 1/2 cup of dairy free ricotta (I used @kitehillfoods), 1/2 teaspoon lemon juice, 1/4 teaspoon salt, dash of pepper mixed with some sautéed spinach. Then roll them up. Brushed with spinach walnut pesto. Everyone has their own story, their own why, their own how.... the key for me in my journey has been focusing on what works for me and knowing it may be different than what motivates or works for someone else. That and acceptance. Accepting that I have limitations. . ..Don’t worry about what others are doing, just know your goals are possible and you can figure out what works for you and your specific situation. . . I chose to change my lifestyle intentionally when my doctor said there *may* be another process going on beyond the two autoimmune issues I already have #celiac & #hashimotos). Sometimes fear can be a motivator for change. Although I always exercised, I began to be far more conscious about how I exercised, the that food I eat, habits and daily choices I make. I started making little lifestyle changes to stay on the prevention and healing side of things, creating balance, and avoiding developing or exacerbating issues further. While it may not prevent or cure everything, exercising in a moderate way keeps me feeling good and managing stress. I’m in far better shape today compared to when I was marathon training and eating gluten at 30. It’s taken time but it’s been so worth it to learn what causes inflammation for me. The postpartum period has typically been a time when I have to be very intentional about reducing inflammation and that seems to be a common experience for women with autoimmune issues. I believe 💯 in the power of self care, mindfulness, and positive intentions. #fbf This photo was taken at the end of week 8 of #bbg I am extremely proud that I made it to the end of week 8. I have started and stopped BBG many times throughout the last 4 years. I think the furthest I have gone is to week 6. To be here right now (well, last week) is quite an amazing feat. It really does show how the mind can conquer anything if you really push yourself and not give up. I feel so much stronger. I look so much stronger. It tastes just like the filling of a pumpkin pie and adding some @specialk cinnamon and brown sugar protein cereal on top tastes just like the crust. I ran out of whipped cream or else that would’ve been on top too! . . . Ingredients: -1 scoop of protein (I used @pescience snickerdoodle) -70g pumpkin purée -1/2 cup almond milk -1/2 frozen banana -1 tsp almond butter -12-15 ice cubes -cinnamon -pumpkin pie spice -dash of vanilla extract -a little bit of liquid stevia -1/4 tsp xantham gum (helps make it thick!) -I topped mine off with 2 tb of cinnamon brown sugar special k protein cereal . Starting off the week with some PALEO PIZZA TOAST! (Recipes below) Happy Monday day loves. I am sharing these toasts I made last weekend for my boyfriend and I to share. Such an easy way to pizza 🙃 I’m kinda fighting off a sore throat so I’ve been sipping on tea and recipe testing today. Trying to take it easy. Which one would you go for first? • • • Deets: 4 slices of paleo bread (I used @mikeys), two topped with pesto (one with @lef_farms greens and @vitalfarms egg and one with tomatoes and avocado and dairy free feta.) The other two topped with a quick pizza sauce (1 tablespoon organic ketchup, one tablespoon tomato paste, oregano, salt and a teaspoon of olive oil). Added some dairy free cheese and @applegate turkey pepperoni. This morning, I finished my first workout after 3 weeks of rest and it was super sweaty💦 and just the right way to start Monday!💥 I am really working towards being a morning person and join my #5amclub babes @balancing.fit, @not_another_fitmom and others🙌🏻 . I did @chontelduncan ‘s Butt Blitz 🍑 tabata styled workout from the targeted area section in the @sweat app and I can tell you I am going to be so sore tomorrow🙈 I might do foam rolling and epsom salt bath in the evening🤷🏻‍♀️ . Emotional eating ✖️ The past few weeks have been extremely hard on myself - I think I heavily underestimated the time, strength and effort it takes to settle in into a new environment. Since moving to Copenhagen in August my life has been a whirlwind of events and everything felt easy, fun and new in the beginning. It’s so important to take time to reflect, unwind and look at everything with some distance and perspective. Journaling always helps me so much when I feel like everything is getting too much. 📖 Mental Health is so important, it’s the cornerstone to a healthy life and also to being able to be physically fit. I always realize that when I get too stressed out, I either start to eat as a way to relax and compensate my emotions or I have no appetite at all and eat way too little. Taking time to differentiate between being hungry, appetite and emotional eating is so necessary in moments like this. If this ever happens to you, take a step back to think about the cause and try using journaling as a way to work through it. 💕
