I had the privilege of being included in @ketochow holiday baking challenge. This is one of my submissions! It’s a pumpkin roll! Please try it so you can vote for me when the voting commences! 🧡💛 also it would be the perfect addition to anyone’s Thanksgiving dessert table! Serves 12 prep time: 30 minutes cook time: 15 minutes Total time including cooling time and refrigeration: 120 minutes Pumpkin cake 3 eggs 1/3 cup powdered erythritol 1/2 cup pureed pumpkin 1 tsp pure vanilla extract 1 tsp baking soda 1 tsp cinnamon 1 scoop (46g) pumpkin spice caramel ketochow Cream Cheese filling 6 ounces room temprature cream cheese 6 Tbsp room temprature butter 1/3 cup powdered erythritol Preheat oven to 350 degrees Prepare a jelly roll pan with a piece of parchment paper that fits the pan and grease the top side of the paper. Add eggs, sweetener, pumpkin, vanilla, baking soda, cinnamon and ketochow together in a bowl and with an electic mixer or stand mixer blend everything until it's nice and creamy. Your cake mixture will be thick, spread around on greased parchment paper until evenly dispersed over the whole surface of the pan. Bake in preheated oven on 350 for 15 minutes. When cake is finished baking let it cool for 1-5 minutes and then roll it up WITH the parchment paper. Let cake cool for 30 minutes while rolled up with parchment paper. While your cake cools you can prepare your filling by adding cream cheese, butter, and sweetener. Beat slowly to incorperate powdered sweetener then speed up and beat for 30 seconds, stop and scrape sides and then beat for another minute. After 30 minutes of cooling unroll the cake and let it cool for another minute or two. Spread your cream cheese filling over the entire cake and then roll up the cake, this time without the parchment paper. Wrap with plastic wrap and set in fridge for at least an hour. When serving you can dust with more powedered sweetener, if desired.

MP combat crunch s’mores ———————————————————————- this bar isn’t quite the complete s’mores flavour profile, but regardless it tastes absolutely wonderful. the coating is thick, rich and creamy and the base is soft and chewy, topped with a superb crunchy layer. it’s really chocolatey with a delightful pop of cinnamon in the base; more of a sweet cinnamon sugar, almost snickerdoodle like graham cracker flavour than a plain cinnamon spice. as for an overall s’mores flavour, it has the chocolate and the graham cracker but the marshmallow element is missing. the base is really chewy and there’s a very subtle, light vanilla marshmallow undertone, but it’s mostly chocolate and cinnamon sugar. it almost reminds me of a reversed white-to-dark chocolate version of the cinnamon twist combat crunch bar. although the s’mores flavour profile isn’t quite on point, I really enjoyed this bar; the combination of creamy rich chocolate and cinnamon sugar is delicious. classic combat crunch macros, with a solid 20g protein and great protein to cal ratio for a slightly bigger than average 63g bar. no complaints here; i’m a big fan of combat crunch bars! the flavour profile of this bar didn’t quite hit the mark, but it does still taste great, the texture is on point and I did enjoy it. Vegan Chocolate and coconut protein fudge 🍓😋⁣ ⁣ INGREDIENTS⁣ • 8 scoops chocolate protein @bodyscience⁣ • 1 can coconut cream⁣ • 1 cup desiccated coconut⁣ • 1/4 cup rice malt syrup⁣ •1/4 cup coconut oil⁣ • Melted dark chocolate⁣ • Strawberries⁣ ⁣ METHOD 👇⁣ 1️⃣First you want to spray a small tray with and then line with baking paper, set aside.⁣ 2️⃣In a bowl combine, protein, coconut cream, oil, desiccated coconut and rice malt syrup. Mix this together until well combined.⁣ 3️⃣Press the mixture evenly into your tin before placing in the fridge to set for 6 hours.⁣ 4️⃣Slice your strawberries into thin slices and set aside. 💥Breaking down your diet💥 . Follow @roballenfitness for more fitness/nutrition info 😊 . What should your macro targets be? Well, that depends on your goal. Macros are Protein, Carbs and Fat. Everything you eat is made up of them. The proportion of each can either be helpful or detrimental to your goal. Whether you want to get bigger or smaller your calorie intake has to match. To be smaller, you have to eat less than you burn. To get bigger, you have to eat more than you burn . 1 gram of protein has 4 calories 🍗 . 1 gram of carbs has 4 calories 🥖 . 1 gram of fat has 9 calories 🥑 . The macros here are just general guidelines to help you plan out your nutritional intake. Emphasis to get in adequate protein is always important and the amount of Fat vs. Carbs can fluctuate based significantly, as you can see above. There is definitely room to manoeuvre in the percentages I’ve listed . Don’t be afraid of carbs. Especially if you are trying to add muscle. When trying to lose weight though, add them in after your protein and carb values have been established 👍🏼 . Little meal prep going on. Baked off the chicken in the oven, roasted the broccoli with fresh garlic oil salt and pepper, sautéed the string beans in oil garlic salt and pepper and cooked off the ground beef with a taco seasoning blend. Makes a good 3-4 meals plus some extra in case I don’t have tine to cook one night.
