Sunday night roast on to cook before prep for the week ahead starts. Dinner tonight is beef roast cooked on slices of onion, sage, thyme and rosemary, covered in mustard, olive oil and garlic. Served with simple roast veg and gravy.

Just a bit of my #mealprep for this week. In my slow cooker I have Mexican chicken which I’ll put with quinoa that I’ll cook in chicken stock and add some frozen veggies. For brekky I’ll alternate between my protein packed pancakes and porridge. Snacks are @yoproau protein yoghurt, a nectarine and choc/salted caramel chia puddings. I had leftover cauliflower rice + sautéed veggies that I paired with 2 soft boiled eggs.
